Chicken Dhansak- time to try something different and unique

This is a unique dish with lots of lentils , spices , vegetables and of course Chicken. Not to say that this dish is very flexible and you can create this without chicken or add more vegetables and still this will be equally relishing ,specially on a rainy day or when you are craving a hearty meal .
Though it's a whole meal in itself , typically it's eaten with Brown rice (usually made with caramelized onion ) and kachumbar (salad made our of onion,tomatoes , green chillies and tamarind paste)

Ingredients
-Chicken pieces -750g to 1kg (bone or boneless)
-Onion -2 (finely chopped)
-Turmeric-1 teaspoon🥄
-Toor Daal - 1/4 cup -Masoor Daal - 1/4cup -Green split mung daal - 1/4 cup -Yellow mung daal -1/4cup
-Eggplant(chopped) - 1/2cup -Pumpkin -1/4cup chopped -Potato -1 medium(peeled and chopped) -Bottle-guard(lauki)or Zucchini (chopped) -1/2cup -Methi(Fenugreek)leaves -1/2 cup(chopped) -Mint leaves- 1/4 cup(chopped) -Coriander leaves -1/4 cup(chopped)
-Ginger paste -1 teaspoon
-Garlic paste -1 teaspoon -Green chillies -2 finely chopped(optional)
-Salt - As per taste
-Red chilli powder-1 teaspoon(optional) -Tomatoes - 2 medium(finely chopped) -Lemon juice- 1 teaspoon -Dhansak Masala - 2 teaspoon(recipe as a separate blog here) -Ghee(oil) -2 tablespoon
Step 1 - Cook the lentils
1. Soak all 4 lentils(mung,masoor,green split mung and Toor daal) for
at-least 4 hours(or overnight)
2. In a pressure cooker + add the above lentils+ all vegetables+ methi
+coriander +mint+ 1 chopped onion and salt.
3. Cook this for 10min or 4 whistles.


Step 2 - The Chicken Bit
1.Marinate the chicken by adding 1 teaspoon of Dhansak masala, lemon
juice and salt to the chicken and keeping aside. 2.In a pan add ghee(oil)
3.Add remaining 1 chopped onion and saute until golden brown.
4.Add ginger paste + garlic paste + chopped green chillies + red chilli
powder and saute for another 2 min.
5.Add chopped tomatoes and saute until another 5min in medium flame.
6.Add 1 teaspoon of dhansak masala and cook for 2 min
7.Add chicken and cook for 10-15 min while stirring continuously until
chicken is tender.
8.Add cooked daal(lentil) and cook for another 10min until all blends
9.Add lemon juice and serve hot with brown rice or just have it by
itself.
