Amritsari Kulche - Stuffed bread filled with potatoes

Wanna try something new on a weekend morning or to entertain guests .
It's time to impress with this easy but definitely impressive dish which comes from Punjab. I am making oven version here but you can choose to make tawa version as well. Have this with pickle yogurt or with any curry.

Ingredients
- For Kulche and others
-High grade flour(Maida)- 1cup
-Yogurt or Curd - 2 tablespoon
-Yeast - 1 teaspoon🥄
-Sugar - 1 teaspoon
-Salt - 1 teaspoon
-Butter - 4 tablespoon
-Cumin seeds -2 teaspoon
-Coriander seeds - 2 teaspoon -Coriander leaves - 1/4 cup finely chopped
-For stuffing
-Boiled potatoes - 2 medium
-Red Onion- 1 finely chopped
-Green chillies -2 finely chopped(optional)
-Coriander leaves (steal from the above ingredients)
-Ginger -finely chopped or grated
-Salt - as per taste
-Butter - 1 tablespoon(taken from above)
-Chaat masala/Aamchur powder - 1 teaspoon
Step 1 - Setting up the dough
1. Add yeast to 2 tablespoon of lukewarm water and keep aside for 10min 2. In a bowl,add maida and yogurt and mix it nicely to form a texture,
now slowly add yeast water and make a dough with light hands .Make
sure the dough should not be very runny or hard. 3. Cover the dough with wet cloth and leave it overnight in room
temperature.
Step 2 - Masala
In a pan roast cumin and coriander seeds for 2-3 min until you can smell the aroma and then coarsely grind them with a belan or Mortar and pestle and keep this aside for later use both in stuffing and on kulcha.
Step 3 - Let's make the stuffing
1. Mash potatoes and then add finely chopped onion,coriander
leaves,ginger,salt,chaat masala and mix together. 2. Now add 1 teaspoon of cumin and coriander masala as made above
3. Also add 1 teaspoon of butter and mix to make the filling smooth.
Step 4 - Let's cook (all prep done)
1. The dough should be double the size now,add salt and 1 teaspoon of
butter and mix the dough with light hand keeping the fluffiness
intact.divide it in 4 portions
2. Fill in the stuffing in each portion, close them and with hand
flat round flatbread to distribute the stiffing evenly.
3. Now roll the flatbread like stuffed paratha making sure the stuffing
doesn't come out.
4. Sprinkle coriander and cumin masala and coriander leaves and press
with fingers in few places so that Kulche does not rise like a
poori.
5. Heat oven to 200 degree in grill mode and let it heat first.
6. In an oven pan,place the kulche and bake for 7-10min until the top
layer changes color to light brown.
7. Add butter on top and serve Hot !!
** If you don't have oven, you can make this in tawa or kadhai, just
make sure it's on high heat
** If you don't have yeast, you can add 1/2 teaspoon of baking soda
and baking powder and make kulche instantly, no need to wait
overnight 😊
