Easy and healthy Beetroot Cutlets

This is a delicious and healthy yet simple recipe to create Beetroot cutlets. This dish is rich in essential nutrients like Folic Acid,calcium, iron, Vit A,C and many more .But sometimes we just like having them as a delicious substitute and snacks.

Don't worry if you don't have all the vegetables , just throw in whateveryou have in your fridge and it tastes equally good . Have this with a simple chutney as a snack or create a patty for your burger or wrap for lunch or dinner .

Ingredients

  • Beetroot - 1 medium

  • Boiled potato - 1 medium

  • Broccoli or cauliflower - 1 cup (roughly chopped)

  • Carrots - 2 medium( 1 cup ) roughly chopped

  • Kale - 1 cup chopped (optional)

  • Spinach - 1/2 cup chopped

  • Coriander or mint - chopped 1/4 cup

  • Ginger (grated) - 1 tablespoon

  • Bread crumbs - 2 tablespoon

  • Green chilles chopped - 2 (optional)


Spices (tastemaker)

  • Cumin seed -1 tspn

  • Cumin powder - 1 tspn

  • Coriander powder- 1 tspn

  • Fennel powder - 1tspn

  • Red chilli powder (optional) - tspn

  • Chaat Masala - 1tspn (optional)

  • Salt - to taste

  • Oil- 4 teaspoon




Step 1 - Prep Vegetable

  1. Boil water in a pot and add salt .

  2. Add washed carrots, broccoli(Cauliflower), beetroot into it and cook for 3-4 min

  3. Strain the vegetables and let it cool down

  4. Grind these vegetables in a food processor or mixer grinder

  5. Add in boiled potatoes and finely chopped spinach and kale leaves to the vegetable paste


Step 2 - Prep Cutlet mix

  1. In a pan (preferred non stick) , add 1 tspn of oil

  2. Add grated ginger , cumin seeds and then chopped green chillies and lower the flame/heat

  3. Now add in all the other spices except chaat masala

  4. Add the vegetable paste and keep stirring for 7-10 min so that the excess water evaporates and it has a dough like consistency

  5. Once done add chaat masala and chopped coriander or mint

  6. Take it out of heat and Let it rest for 5 min


Step 3 - Just ready in time

  1. In a non stick pan, add 1 tspn of oil and spread it over with a wooden spoon or brush.

  2. Keep the flame low

  3. Make 8 equal balls from the vegetable dough and shape it like a cutlet with the help of your palm (make sure the palm is greased with oil )

  4. Spread the bread crumbs on a plate and cover the cutlets with it

  5. Add the cutlets into the pan and lightly brush with oil .Make sure to cook it in low flame so that it's crispy and well done

  6. Serve hot with a chutney or tomato ketchup :-)
