Masala Soyabeans

Soyabeans - A very rich source of protein and it's a blessing to vegetarians . it's a surprise that many cornersof the world don't know much about soyabean chunks . When I was young I remember having masala soyabean as a delicacy few times in a month and woud love it for what it tastes like. For me it was vegetarian chicken and now when I think about it it's so relatable -it tastes like chicken and also it's rich in protein as chicken .


So here is my mom's recipe for Masala Soyabeans (serves 2), best served with hot chapatti or Paratha/

*Medium spicy/ Dry to semi dry gravy

Cooking time -30min / Prep time 40 min


Ingredients

Soyabean chunks -1 cup

Onion - 1 medium finely chopped

Ginger paste - 1 tblsp

Garlic paste - 1 tblsp

cumin powder - 1tspn

coriander powder - 2 tspn

Garam masala - 1 tspn

Turmeric - 1 tspn

Greek yogurt - 1/4 cup

bayleaf- 1

Green cardamom- 2

Cloves-4

Cinnamon-1 stick

Oil- 4 teaspoon

Coriander leaves - for garnish

Salt - to taste

Green chillies - 2 (optional)


Step 1

Soak Soyabean in warm water and keep aside for 20 min

After 20 min strain the water and squeeze out all the water from the soyabean chunks


Step 2

Turn on the gas , in a pan add 2 tbspn of Oil and after few seconds add drained soyabean chunks and saute for 5 min until nicely fried (this will make sure elimination of raw flavor and smell) and keep it aside .


Step 3

Now to make the gravy, heat the remaining oil in the pan, now add bayleaf, cardamom, cloves and cinnamon. After 1 min add finely chopped onion and sprinkle some salt .

Fry the onion until it starts turning brown.

Now add ginger and garlic paste and 1/4 cup of water so that it does not stick to the bottom. now add all the powders cumin, turmeric and coriander and copped chillies, keep garam masala for later .

keep stirring and once the oil starts separating , lower the flame and leave for another 2 min .

Now add greek yougurt while stirring and cook for another5 min.

Now add greek yogurt while stirring and cook for another 5 min. in slow flame for another 5 min. Switch off and garnish with coriander leaves .
