Golbari Chicken- time to try a different Chicken gravy

I just wanted to try something different which I have never tried before and trust me this dish does not disappoint at all.
It's a Bengali dish which is made in mustard oil and then infused with tea liquor.
Sound interesting right ? So let's just get going .

Ingredients
-Marination
-Chicken pieces -750g to 1kg (bone or boneless)
-Onion -1(make paste)
-Turmeric-1 teaspoon🥄 
-Yogurt -2 tablespoon
-Ginger paste -1 tablespoon
-Garlic paste -1 tablespoon
-Salt - As per taste
-Red chilli powder-1 teaspoon(optional)                                    -mustard oil -1 teaspoon        
Other Ingredients
-Mustard Oil -1/2 cup
-Red Onion-2 diced
-Dried red chilies whole -2 
-Bay leaf -2
-Cloves - 4
-Cardamon -4
-Cinnamon -1 stick
-Red chilli  powder -2 teaspoon                                        -Cumin powder -1 Teaspoon                                                             -Garam Masala powder -1 teaspoon                                        -tea leaves-2 teaspoon                                                   -turmeric powder-1 teaspoon                                            -Salt - As per tasteStep 1 - Marination of chicken
1. Add cuts to chicken pieces to absorb the spices                    2. In a bowl,add chicken and the marination ingredients as above                          3. Refrigerate overnight or at least for 4-5 hours                
Step 2 - Tea Liquor
Add 2 teaspoons of black tea leaves to 2 cups of water and boil until  it  becomes 1 cup , strain and keep  it  aside to  use later
Step 3 - Red Onion Paste
1. In a pan add 4 tablespoon of oil and fry diced onion until brown                    2. Take out  the fried onion and let it cool down
3. Make a paste in a grinder and keep it  aside to  use laterStep 4 - Let's cook (all prep done)
1. In a pan add remaining  mustard oil and wait for it to heat up for    
   2-3min
2. Add whole red chili,bay leaves,cardamom and cinnamon 
3. Add red onion paste and marinated chicken and cook on high flame         
   while stirring continuously for 5min.
4. Add turmeric, red chili powder,cumin powder and salt , Stir 
   continuously for 5 min.
5. Cover the pan and cook in medium flame until chicken is cooked while 
   stirring in intervals and sprinkle garam masala.
7. Add tea liquor to the gravy and cook  for another 2-3 min
7. Garnish  with  coriander and serve hot !!
